Recipes

Here are a couple of our famous recipes that we want to share with you!

Kale Salad

Ingredients:

1 bunch of kale
1/2 red onion – sliced thinly
1 red pepper – sliced
4 green onions – sliced
1/2 cup of sunflower seeds
1/2 cup of dried cranberries
1 cup of cucumber – sliced in half moons thinly
3 TBSP of chopped fresh parsley
1/2 tsp of salt
1/4 tsp of pepper

Put all ingredients in a bowl and use a good quality balsamic vinaigrette (about 1/2 cup), and add 1 TBSP of smooth Dijon mustard to salad dressing.

Whisk until smooth and pour over the ingredients and mix well.

Date Squares

Ingredients:

6 cups of dates
1 lb of butter
2 TBSP of vanilla extract
3 cups of flour
5 1/2 cups of oats
1/2 TBSP of salt
1 3/4 cups of packed demerara sugar

Preheat oven to 325 degrees

6 cups of dates – put in a small pot and cover with water – cook until smooth, then drain and put aside the water – you may need to add some to the oat mixture later. Mash up the dates with a potato masher or fork.

Meanwhile melt – 1 lb of butter
Add – 2 TBSP of vanilla extract

In a large bowl mix – 3 cups of flour
5 1/2 cups of oats
1/2 TBSP of salt
1 3/4 cups of packed demerara sugar

Mix the butter and vanilla mixture with the dry ingredients. If the oat mixture seems a bit dry, you can add a bit of the date/water that you drained and put into the oat mixture.
Spread half of the oat mixture into the bottom of a 9 X 13 inch baking pan. Next, spread all the dates in a layer, and spread smoothly over the oat mixture. Top with the remainder of the oat mixture.

Bake at 325 for about 30-40 minutes, or until golden brown. Let it cool completely before slicing and serving.
